Quiche dishes
 

Quiche Classic
1 9-inch pastry shell
12   slices bacon, fried and crumbled
1   cup shredded Swiss cheese
1/3   cup onion, minced
4   eggs
2   cups whipping cream or light cream
1/4   tsp. salt
1/4   tsp. sugar
1/8   tsp. cayenne red pepper

Preheat oven to 425 degrees. Prepare pastry. Sprinkle bacon, cheese and onion in pastry-lined pie pan. Beat eggs slightly; beat in remaining ingredients. Pour cream mixture into pie pan. Bake 15 minutes. Reduce oven temperature to 300 degrees and bake for 30 minutes longer or until knife inserted comes out clean. Let stand 10 minutes before cutting. Serve in wedges. Meat Potato Quiche

3 cups raw potatoes, shredded
3   tbls. vegetable oil
1   cup Swiss or cheddar cheese, grated
1/4   cup onion, diced
3/4   cup chicken, ham or sausage, cooked and diced
1   cup evaporated milk
2   eggs, beaten
1/2   tsp. salt
1/2   tsp. pepper

Preheat oven to 425 degrees. Stir together potatoes and vegetable oil in a 9-inch pie pan. Press evenly into pie crust shape. Bake for 15 minutes, or until crust just begins to brown. Remove from oven. Layer the crust with cheese, onion, and diced meat. In a small bowl, mix together evaporated milk, eggs, salt and pepper. Pour egg mixture over other ingredients. Return to oven and bake for 30 minutes or until lightly browned. Yields 6 to 8 servings. Joni Miller, Clark, Mo.

Pizza Burger Quiche

1 9-inch pastry shell, unbaked
1   lb. lean ground beef
1   medium onion, chopped
4   eggs
1/2   cup cream or rich milk
1/2   tsp. salt
1/2   tsp. pepper
1/2   tsp. oregano
1   cup cheese, shredded
1   (8 oz.) can pizza sauce

Pierce unbaked pastry shell with a fork and bake for 8 minutes at 425 degrees. Toss beef and onions in a hot pan until lightly browned. In a separate bowl, beat eggs with cream and seasonings. Stir in cheese and add meat mixture. Pour into partially baked crust and bake at 350 degrees for about 40 minutes or until knife comes out clean. Remove from oven to spread top with pizza sauce; bake another 10 minutes. Slice and serve while hot. Yields 4 to 6 servings. Marlo Bockting, Morrison, Mo.
